Ingredients (Minimal, 8 items)
• 1 cup basmati or long-grain rice (rinsed)
• ½ cup brown or green lentils (rinsed)
• 2 ½ cups water or vegetable broth
• 1 small onion (chopped)
• 1 clove garlic (minced)
• 1 teaspoon cumin seeds or ground cumin
• 1 tablespoon olive oil or coconut oil
• Salt to taste (optional squeeze of lemon to finish)

• 2 ½ cups water or vegetable broth
• 1 small onion (chopped)
• 1 clove garlic (minced)
• 1 teaspoon cumin seeds or ground cumin
• 1 tablespoon olive oil or coconut oil

Instructions

  1. Prepare the base:
    In a large pot, heat olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds, then add onion and garlic. Sauté until fragrant and golden.

  2. Add lentils:
    Stir in lentils and 1 cup of water. Cover and cook for about 10 minutes until they begin to soften.

  3. Add rice:
    Add rice, remaining water or broth, and salt. Stir well to combine.

  4. Simmer together:
    Bring to a boil, then lower the heat. Cover and simmer for 15–20 minutes until both rice and lentils are tender and all liquid is absorbed.

  5. Fluff and serve:
    Turn off the heat and let it rest for 5 minutes. Fluff gently with a fork.

  6. Optional garnish:
    Finish with a drizzle of olive oil, fresh herbs, or a squeeze of lemon for a simple, nourishing meal.
