Island Glow Curry Quinoa & Chickpeas
Ingredients (Minimal, 7 items)
•1 cup quinoa (rinsed)
•1 can (15 oz) chickpeas (drained & rinsed)
•1 can (13.5 oz) coconut milk
•1 ½ tbsp Caribbean curry powder (or regular curry powder + pinch allspice)
•1 clove garlic (minced)
•1 small onion (chopped)
•Salt to taste (optional squeeze of lime to finish)
Instructions
1.Sauté the base:
In a pan, heat a drizzle of oil or a splash of coconut milk. Add onion and garlic; sauté until fragrant (about 2 minutes).
2.Add the flavor:
Stir in curry powder and toast for 30 seconds to bring out the aroma.
3.Cook the quinoa:
Add quinoa, coconut milk, and ½ cup water. Stir well, cover, and simmer for 15 minutes until quinoa is fluffy.
4.Mix in chickpeas:
Fold in chickpeas and simmer another 3–5 minutes so everything absorbs the curry flavor.
5.Finish Caribbean style:
Taste and add salt or a squeeze of lime. Optional: sprinkle chopped scallion or a dash of hot sauce.
